Ingredients

Main Ingredients

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup shredded Swiss cheese
  • 1/2 cup diced ham
  • 1/4 cup chopped fresh parsley
  • 1/4 cup milk
  • 1/4 cup Dijon mustard
  • 1 large egg
  • Salt and pepper to taste
  • 1/2 cup additional Swiss cheese for topping
  • 1/2 cup barbecue sauce or gravy for serving

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan to prevent sticking.
  • In a large bowl, mix together the ground chicken, breadcrumbs, Swiss cheese, diced ham, parsley, milk, Dijon mustard, egg, salt, and pepper. Stir until everything is well combined.
  • Transfer this mixture to the prepared loaf pan. Shape it into a loaf form.

Cooking

  • Place the loaf pan in the preheated oven and bake for 45-50 minutes. Use a meat thermometer to check that the internal temperature has reached 165°F (74°C).
  • About 10 minutes before it's done, sprinkle the additional Swiss cheese on top for a golden, bubbly finish.
  • Once cooked, let the meatloaf rest for 10 minutes. This allows the juices to redistribute. Slice and serve with barbecue sauce or gravy.

Notes

To store leftovers, keep them in an airtight container for up to 4 days in the refrigerator. For longer storage, wrap individual slices in plastic wrap and foil; freeze for up to 3 months. Let it thaw in the fridge overnight before reheating.
