Instructions
Preparation
Preheat your oven to 325°F (160°C).
In a bowl, mix together the graham cracker crumbs, 1/4 cup sugar, melted butter, and cocoa powder until well combined.
Press the mixture firmly into the bottom of mini cheesecake pans to form the brownie base.
Bake for 10 minutes, then set aside to cool slightly.
In another bowl, beat together the softened cream cheese, 1 cup sugar, brown sugar, and vanilla extract until smooth.
Add the eggs one at a time, mixing well after each addition.
Gently fold in the sour cream and heavy cream until well blended.
Baking
Pour the creamy cheesecake mixture over the slightly cooled brownie base in the mini pans.
Bake for about 20-25 minutes or until the cheesecakes are set around the edges but still a bit jiggly in the middle.
Ganache Preparation
For the ganache, heat 1/2 cup heavy cream in a saucepan until it begins to simmer.
Pour it over the chocolate chips in a separate bowl and stir until smooth and glossy.
Once the cheesecakes are cooled, drizzle ganache over the top of each cheesecake bite.
Serving
Sprinkle extra chocolate chips on top for added garnish.
Chill the cheesecakes in the refrigerator for at least 2 hours before serving.
Notes
Make sure to use room temperature ingredients for a smoother texture. Avoid overmixing the cheesecake batter once you add the eggs to prevent density. Let bites cool fully before adding ganache.
