Preparation
Peel and dice the sweet potatoes into small cubes and set aside.
Cooking
In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
In the same skillet, add olive oil. Add the diced onion and bell pepper, and sauté for 3-4 minutes or until they soften. Add the minced garlic and cook for another minute.
Add the sweet potatoes to the skillet along with paprika, cumin, salt, and pepper. Stir well to combine everything.
Cover the skillet and let it cook on medium-low heat for about 15-20 minutes. Stir occasionally until the sweet potatoes are tender.
Once the sweet potatoes are cooked through, taste and adjust seasonings if necessary. Garnish with fresh cilantro if desired and serve in bowls.
Notes
Store leftovers in an airtight container in the fridge for about 3-4 days. They can also be frozen for up to 3 months. Reheat in the microwave or stovetop until warm. Tips: Cut sweet potatoes uniformly, avoid overcrowding the pan, and taste as you go.
