Instructions
Preparation
Start by washing and peeling the potatoes. Cut them into small cubes.
Toss the cubes in a bowl with a bit of olive oil, salt, and pepper.
Cooking
Preheat your oven to 400°F (200°C). Spread the potato cubes on a baking sheet and roast them for about 25-30 minutes, stirring halfway through.
While the potatoes are roasting, heat a skillet over medium heat and add the ground beef (or turkey). Cook until browned, breaking it up as it cooks.
Drain any excess fat and stir in the taco seasoning and a small amount of water according to the packet’s instructions. Cook for an additional 5 minutes.
Assembly
Once the potatoes are done and crispy, remove them from the oven. In a large bowl or individual serving bowls, layer the roasted potatoes, seasoned meat, black beans, corn, and shredded cheese.
Top with a dollop of sour cream, a scoop of salsa, and diced avocado. Garnish with fresh cilantro.
Serve warm and enjoy!
