Ingredients

Main Ingredients

  • 1 pound Sausage (pork or turkey) Use lean sausage for a healthier option.
  • 2 large Potatoes, diced Any variety works well.
  • 2 cups Mixed vegetables (bell peppers, carrots, broccoli) Feel free to substitute seasonal vegetables.
  • 1 Onion, chopped
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

Preparation

  • Wash the potatoes and vegetables. Dice the potatoes into bite-sized cubes and chop the vegetables and onion.

Cooking

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sausage and cook until browned, about 6-8 minutes, breaking it into smaller pieces with a spatula.
  • Once the sausage is cooked, remove it from the skillet and set it aside. In the same skillet, add another tablespoon of olive oil. Add the diced potatoes and chopped onion and stir for about 5 minutes until they start to soften.
  • Sprinkle the garlic powder, paprika, salt, and pepper over the potatoes and onions. Mix well to combine. Add the mixed vegetables and return the sausage to the skillet. Stir everything together.
  • Cover the skillet and reduce heat to medium-low. Let it cook for 15-20 minutes, stirring occasionally, until the potatoes are tender and the vegetables are cooked through.

Serving

  • Taste and adjust seasoning if necessary. Garnish with fresh parsley if desired. Serve hot and enjoy your healthy dinner!
